Tamarind Chutney for Chat

This Savory-sweet sauce is superb over baked, grilled and fried Fish. It also makes a great dipping sauce for Asian dumplings such as Pakora’s, Chat and Cutlets.

Ingredients:

5 Tablespoons Brown Sugar
½ Cup Diced Onions
1 Clove Garlic, Diced
2 Dried Red Chilies, Seeded and Chopped
3 Tablespoons Soya Sauce
3 Tablespoons Pineapple Juice
¼ Cup Chopped Coriander
¼ Tablespoon Freshly Ground Black Pepper

1. Take 200g of Tamarind and soak it in ½ cup of hot water for about 15 minutes.
2. Stir it and Press it. Strain it, Squeezing out as much water as possible and discard the dried pulp.
3. Combine 1/3 cup of Tamarind Water and brown sugar in a medium saucepan over low heat and stir, until the sugar dissolves.
4. Add Onions, garlic and chilies. Stir for three minutes.
5. Add Soya sauce and Pineapple Juice and stir.
6. Cover and simmer for 10 minutes.
7. Stir in Coriander and Black Pepper.

Ready to serve with chat, samosa or pakora's.

Make about 1 Cup.

Mukta, I advise you use a little butter in the chatney. It will give it a shine. Also, have you ever tried chopped dates in this chatney. Try it, the is amazing
